Description

  • Vanilla Cupcakes:
    • 1 1/2 cups (188g) all-purpose flour
    • 1 cup (200g) granulated sugar
    • 1 1/2 tsp baking powder
    • 1/2 tsp salt
    • 1/2 cup (113g) unsalted butter, room temperature
    • 2 large eggs
    • 1/2 cup (120ml) whole milk
    • 1 tsp vanilla extract
  • Custard Filling:
    • 1 cup (240ml) whole milk
    • 3 egg yolks
    • 1/3 cup (67g) granulated sugar
    • 2 tbsp (16g) cornstarch
    • 1 tsp vanilla extract
  • Chocolate Ganache:
    • 1 cup (240ml) heavy cream
    • 8 oz (227g) semi-sweet chocolate, chopped

Instructions

  1. Preheat & Prep: Oven to 350°F (175°C). Line muffin tin with liners.
  2. Make Cupcake Batter: Whisk dry ingredients. Add butter, eggs, milk, and vanilla; beat until smooth. Fill liners 2/3 full.
  3. Bake Cupcakes: 18-20 mins until toothpick comes out clean. Cool.
  4. Prepare Custard: Whisk milk, yolks, sugar, and cornstarch over medium heat until thick. Stir in vanilla. Chill.
  5. Make Ganache: Heat cream, pour over chocolate, let sit, then stir until smooth.
  6. Assemble: Cut hole in cupcakes, fill with custard, top with ganache.

  • For a smoother ganache, chop chocolate finely before adding hot cream.
