- Vanilla Cupcakes:
- 1 1/2 cups (188g) all-purpose flour
- 1 cup (200g) granulated sugar
- 1 1/2 tsp baking powder
- 1/2 tsp salt
- 1/2 cup (113g) unsalted butter, room temperature
- 2 large eggs
- 1/2 cup (120ml) whole milk
- 1 tsp vanilla extract
- Custard Filling:
- 1 cup (240ml) whole milk
- 3 egg yolks
- 1/3 cup (67g) granulated sugar
- 2 tbsp (16g) cornstarch
- 1 tsp vanilla extract
- Chocolate Ganache:
- 1 cup (240ml) heavy cream
- 8 oz (227g) semi-sweet chocolate, chopped
Instructions
- Preheat & Prep: Oven to 350°F (175°C). Line muffin tin with liners.
- Make Cupcake Batter: Whisk dry ingredients. Add butter, eggs, milk, and vanilla; beat until smooth. Fill liners 2/3 full.
- Bake Cupcakes: 18-20 mins until toothpick comes out clean. Cool.
- Prepare Custard: Whisk milk, yolks, sugar, and cornstarch over medium heat until thick. Stir in vanilla. Chill.
- Make Ganache: Heat cream, pour over chocolate, let sit, then stir until smooth.
- Assemble: Cut hole in cupcakes, fill with custard, top with ganache.
